Sake is Gluten Free
Ah, sake, Japan’s gem of a brew, so pure, sulfite free, gluten free and even touted as hangover free. The average hot sake ordered at a japanese restaurant is always an option. But this is wide world where many things are possible including beautiful cold sakes! Enjoying cold sake, especially with sushi is a unique pleasure. Sake is a Japanese alcoholic drink made of fermented rice, water and koji, a micro-organism commonly used in Japan that enables fermentation. In Japan special rice is grown and milled or polished to prepare the rice for the brewing process. Increased milling removes fats, proteins and amino acids that can lead to unwanted flavors. There are several levels of sake. The three that you will most likely encounter are as follows: Junmai-shu has atleast 30% of the rice milled away. This is your entry level sake. Ginjo-shu (premium sake) has at least 40% or more milled away. Daiginjo (super premium sake) has at least 50% or more milled away. We have several new cold sakes in the shop including a celebration sake with gold flakes! Another interesting new cold sake is Pure Dawn. It is a Junmai-ginjo meaning that the rice grains have gone through an extra step in polishing. Most of the new sakes are dry but we do have a couple of flavored sakes that are great with food. Sake pairs well with sushi, Chinese food as well as some creamy pasta dishes.
